Citrus Brussels Sprouts

Brussels sprouts are the type of vegetable that most people don't know the love until they've tried them the right way. Of course they're not going to be for everyone, but once you sauté them with green onions and lime you just might become a believer that you can change someone's mind about them! The delicious blend of the green onion and citrus flavor is perfect with the rich buttery taste of the sprouts, and can be paired with most anything!
Keep in the pan for an extra few minutes to achieve a charred almost popcorny flavor, or keep them soft and smooth for a deep fresh taste.

12 brussels sprouts, trimmed and quartered
6 cloves garlic, chopped
1 bunch scallions, chopped
1 shallot, chopped
2 tablespoons lime juice (to taste)
2 tablespoons olive oil

Combine oil, garlic, and scallions in a pan and sauté until shallots are soft, then add scallions and sauté for another 2 minutes.
Add sprouts and sauté until slightly crispy (about 15-20 minutes).
Remove from heat and season with salt and lime juice.
