Garlic Roasted Asparagus with Lemon


Having a go-to side dish is more important than I ever realized. Most of my dishes usually are paired with something, and I’ve found that something can be quite challenging to pin point at times. Well look no further; I have the best simple but delightfully complex side dish that is guaranteed to be not only a crowd pleaser but also a wonderful addition to any meal! Roasted asparagus with garlic, topped with fresh lemon juice! This side dish is easy to prepare, and encompasses a wonderful blend of flavors. The richness of the asparagus and boldness of the garlic is complemented finely by the fresh lemon juice, creating a rich but tangy combination that is bound to wish you had combined the trio before! Topped with a light coat of olive oil, salt, and pepper, toss these spears in the oven for about 45 minutes and you’re set!

The beauty of it is that not only is the prep time lightning fast, but because it takes about 45 minutes you can pop them in the oven first and spend the cooking time on getting the rest of the meal ready.  You can also cater to your own tastes with the garlic and lemon. I personally prefer a healthy dose of both, but that’ll be something you discover on your own!
Prepare in equal proportions:
8 spears asparagus
3 cloves garlic, minced
1 tablespoon olive oil
Juice of ¼ lemon
Salt and pepper to taste

Preheat oven at 400 degrees.
Cut off bottom part of the asparagus stem, and coat with olive oil, salt, and pepper.
Evenly distribute asparagus on baking pan, and sprinkle chopped garlic over top.
Bake for about 45 minutes, gently tossing the spears every 15 minutes (or until soft and tips are slightly crispy).
Drizzle with lemon before serving.
